Cream of Carrot Soup. THE BEST.

Ahhh. A traditional cream of carrot soup. Straight from the family recipe book. There is nothing better than this and it is so healthy! 
This recipe serves 4-6 people but obviously can be increased for larger/smaller servings. But this even freezes great so you can never make too much! And even better it's only 119 calories per serving.

Cooking time 30mins.

Ingredients:
45g butter
1 medium diced onion
6 thinly sliced carrots 
1 celery stick sliced 
1/2 teaspoon of basil
1tablespoon chopped parsley 
3 tablespoons of plain flour
2 1/4 pints of heated chicken stock (vegetable stock if your vegetarian) 
Salt and pepper to taste.

Method:
1. Heat butter in a large saucepan over a medium heat. 
2.Add onion, cover and cook on a low heat. 
3. Add carrots, celery, basil and season well with salt and pepper and mix, cook for a further 6 minutes, partly covered over a medium heat. 
4. Mix in flour until well incorporated. 
5. Pour in chicken stock. Season to taste and bring to the boil, leave the lid ajar so steam can rise. 
6. Reduce the heat to low and cook stock for a further 20 minutes. 
7. Blend and serve with hot bread.
